You are buying your selected portion of a whole beast, whether that be an eighth, a quarter, a half or a whole portion.
The whole beast of course has to be processed and, after it is processed, you will be delivered the processed meat attributable to your portion.
So, to take a recent example, a beast weighing 420 kg (this is called the live weight) after slaughtering produced a carcass weighing 217 kg (this is called the carcass weight or dressed weight). That was then processed by the butcher and resulted in an overall usable weight of about 170 kg. If you purchased an eighth portion of that beast, you would have received around 21.25 kg of meat when delivered.
However, what was purchased in reality was an eighth of a beast with a live weight of 420 kg - so, 52.5 kg. It is through processing that the meat actually delivered in your box reduces to the amount delivered i.e., 21.25 kg.

We can sell you the whole beast, a half, a quarter or an eighth.
The price is $22.50 per kg of meat in the delivered portions. The contents of each box are weighed and marked by the butcher before sealing it up for delivery to you, and that is what you pay for.
The overall cost will of course vary depending on the weight of the beast but, as a bit of a guide, if you purchase an eighth of a beast weighing 450 kg to 500 kg, after processing you will be delivered around 20 kg to 25 kg of meat. In that case, the total price will work out to be between approximately $450 and $550.
Of course, as explained in answer to the previous question - What am I actually buying? - if you purchase an eight of a beast with a live weight of 450 kg to 500 kg, you are buying between 56.25kg and 62.5 kg of live weight. So, if you end up paying between $450 and $550 for the delivered portions, this equates to a cost to you of between $8.00 and $8.80 per kg of live weight.

Half, quarter and eight portions come with the same cuts of meat, but you can join with others to purchase a whole beast to specify different cuts if you like. For example, instead of rib fillet steaks, your group could opt for rib on the bone.

Please click on the Order now button on the main page or click on the Shop tab at the top of the page or, better still, click on this link - Express Checkout.
Once there, select what size portion you wish to order and hit the Purchase button underneath to pay the deposit on your order.
Once the deposit is paid, your order is confirmed. The balance will then be payable on delivery.

The balance payable on delivery will be the weight of your order (marked on your box by the butcher) multiplied by our price ($22.50 per kg of delivered meat) less the deposit you paid when your placed your order.
For example, let’s say you order an Eighth portion. The deposit paid is then $200. When your box arrives, let’s say that it contains 23.125 kg of meat. The total cost will therefore be $520.31. The balance payable will this amount less your deposit - so, on delivery, we will ask you to pay $320.31.

We won’t know the actual figure payable by you for your meat until we are loading your order for delivery. That will be the first time we see what the actual total weight of your delivered portions is.
When we get to your home we will let you know what how much is payable and you can of course check our calculation against your box which, as we have said elsewhere, is delivered unopened and is marked by the butcher with the actual weight of the portions inside.
We are working towards a “Tap to Pay” app on our phone but, until that is in place, we will give you our bank account details for a direct deposit. If that is not suitable, please let us know in advance of delivery so we can discuss a suitable alternative with you.

Yes, we offer delivery to the Brisbane Metropolitan Area. If you are outside this area, please contact us and we shall we what we can do. Delivery is free in most cases. Deliveries usually occur on Saturdays. When you confirm your order, we will let you know when delivery is planned and, closer to the day, we will let you know the day and approximate time. We also, at least usually, send you a text the day before to remind you.

We deliver all meat in a refrigerated van supplied by The Butcher Co in Kalbar.

Once your order is confirmed, it will be allocated to the next available delivery date.
That may not be the next delivery day if our orders have been filled for that run but, if so, it will be the delivery day after that.
After we receive confirmation of your order, we will email you with our expected delivery day.
Keep an eye on the ticker tape on the home page for notifications regarding delivery days.

Yes, please, or at least someone else at your home to take delivery so that it can be promptly unboxed and stored in your fridge and freezer.

We recommend that you unpack your box as soon as it is delivered, but leave the individual portions unopened in their Cryovac packages.
Then:
Select what you will use in the following fortnight. They will keep perfectly well in your fridge provided they remain unopened in their Cryovac packages (we do recommend that you turn the packages every two or three days though); and
Place the rest of your order unopened in the freezer. They will keep for up to 12 months without any problem provided (yes, you guesed it) they remain unopened in their Cryovac packaging.

Freezer size – work on about two litres of capacity for each kilogram of meat.
A typical chest freezer (a.k.a. a Tucker Box freezer) has a capacity of about 150 litres, so plenty of room for two or three one eighth orders.

Yes, we have had this said to us, but please let us explain …
Each order comes with a complimentary bag of mixed bones from your portion of the beast. But they are not weighed and you do not pay anything for them. They are not included in the box of cuts which is delivered to you sealed by the butcher - they are handed to you separately in a bag.
But, you certainly don’t have to take them. Just tell us when you place an order, “You can keep your bones!”
And don’t worry, they won’t go to waste as we have a number of customers who ask for more bones to make soup, beef stock, etc. We of course also have customers who love to spoil their canines.
